Scolymus hispanicus

Spanish Oyster Plant - Flowering from April to September this biennial thistle will colonise hot and dry cultivated areas. Sometimes cultivated for the edible roots. Even its flowers are used as a substitute for saffron in cooking. They can grow up to 80cm tall. I photographed these in Praia Da Rocha Portugal flowering in April and May.
